Café Adriana by Hill Station is the third Baguio concept from restaurateur Mitos Benitez-Yñiguez (after the Casa Vallejo flagship and Bistro by Hill Station), opened just before the end of 2016. It sits on the view-deck amenity level of the DMCI Outlook Ridge Residences — a mid-rise resort condotel on Outlook Drive, near Baguio Country Club, The Mansion, Wright Park, and Pacdal Circle — and its signature draw is the setting: a lush, simple-but-elegant café with an open veranda and a soul-soothing view of the Itogon mountain range and Cordillera ridges, a genuine getaway from the city center. The food is described by the owner not as strictly Spanish but as the familiar Filipino-Spanish comfort cooking she grew up eating, with Mediterranean touches and a deliberately greener, healthier bent. Paella is the heart of the menu — Valenciana, the squid-ink Paella Negra, a sausage-laden Pollo y Chorizo, and even a vegan Paella de Legumbres (good for 2–3) — alongside tapas (calamares, callos), brick-oven thin-crust pizzas (the seafood and mixed-sausages pizzas are favorites), lengua and ox-tongue dishes, Bistecca y Carabineros, baked salmon, ribs in a chocolate-sauce base, chicken inasal, salads and grain bowls (greens-lentil, roasted-veggie), sandwiches, French onion and cream-of-mushroom soups, and a dessert lineup of craft ice cream (the Good Shepherd ube flavor, Turon ala Mode), molten chocolate cake, flan, and cheesecakes. It runs à la carte or a buffet (a midday buffet around 10 AM–2:30 PM, and a Sunday brunch buffet), and is equipped with a full bar — fresh fruit juices and shakes through cocktails, sangria, and single-malt whiskeys — plus a larger-than-usual coffee menu. The paellas, lengua, pizzas, and especially the view, ambiance, and attentive service draw consistent praise, and birthday celebrants get a free slice of cake. Parking is easy via the hotel and the environment is secure — it is up Outlook Drive, so a car or taxi is easiest.
