In 1972, in a quiet corner of Burnham Park, Moises and Zenaida Cating took over a small restaurant and named it Solibao — the Ibaloi word for a traditional Cordilleran drum, a symbol of rhythm and gathering. It grew into a home-grown chain now run by the founders' children, with the lakeside Burnham branch as its original home (the official site lists four locations: this one, Session Road/Porta Vaga, Cedar Peak, and sister-brand Ganza). The kitchen leans Cordilleran-Filipino: the signature pancit palabok, binagoongan liempo, kare-kare, Ilocos bagnet and puto bumbong, plus sinigang na bangus belly sa miso, pinakbet, pinikpikan and pakpako salad. The big draw is puto bumbong served all year round — a steamed purple rice cake with Magnolia butter and muscovado, a Christmas treat you can get in June. The setting is laid-back, with wide glass windows facing the lake and the Melvin Jones grandstand and coveted al fresco tables in the cool mountain air — old-timers and post-run athletes favour coffee out front. Most savoury dishes are share-size, good for two to four.
