The first-ever Mario's opened in Baguio City on September 1, 1971, founded by Mario and Nenuca Benitez, who later expanded to Makati (1974), added a catering arm, and opened a Tomas Morato, Quezon City branch in 1981; today the family group also operates in Clark. Nenuca brought the Spanish recipes she grew up with, the signature steaks followed, and the crown jewel became Mario's Caesar Salad, prepared tableside. After more than five decades it remains a continental fine-dining classic. The Baguio branch has relocated from its longtime Upper Session Road address to a larger space at 8 Loakan Road, near Camp John Hay; regulars note the new location has a better ambiance and a view. The setting is cozy and elegant with warm lighting, the soothing sounds of a live pianist, indoor and outdoor seating, and private rooms for events, plus ample parking. The menu spans steaks (fillet mignon, peppered tenderloin, salpicado, T-bone and porterhouse for sharing), Spanish dishes (seafood and other paellas, gambas, callos, lengua), seafood (charbroiled blue marlin, salmon, Chilean seabass, prawns), pastas, an all-day breakfast, and tableside-prepared specialties like the Caesar and the mango flambé. The Caesar salad and steaks are perennial must-orders, and showy desserts like the mango jubilee are prepared in front of diners. Service is a repeated highlight — attentive, prompt waiters at an old, trusted Baguio place that never disappoints — and it is a go-to for family gatherings, dates, and special occasions. A couple of practical notes: it is on the pricier side, the Loakan location is a short drive from the city center, and the paella has a roughly 45-minute cook time, so order it early.
