Hill Station Bistro — Camp John Hay is the pine-forest bistro outlet of the celebrated Hill Station group (whose Miele Guide-awarded flagship is in historic Casa Vallejo), in the Retail Plaza of the Baguio-AyalaLand Technohub inside Camp John Hay. It carries the warm, old-world Hill Station feel — rustic wooden interiors, warm lighting, a cozy colonial atmosphere — in a relaxed bistro format, and shares the Hill Station Bistro menu with its SM Baguio sibling: the globe-spanning lineup of slow-roast beef belly, beef kaldereta (a reviewer called it the best they had had in ages), grilled beef tenderloin (praised as one of the best steaks in the Philippines for the price), old-fashioned baby back ribs, crispy belly pork, the Gourmet Deli Corner of Filipino stews (kare-kare, callos, bicol express, dinuguan, chicken tikka masala) over upland red rice, a deep all-day breakfast (eggs benedict, beef tapa, adlai champorado and arroz caldo, fried chicken and waffles, silogs), pastas in solo and sharing Double sizes (the spicy chorizo aligue, baked bolognese, beef-shiitake), deli sandwiches and the bistro burger, plus the much-loved Bistro Salad and Caesar (both available as generous sharing doubles). Desserts run to the brand's mango sans rival and apple pie. It opens early at 7 AM daily and is a calm, scenic stop amid the cool CJH pines. Practical note: jeepneys do not operate inside Camp John Hay, so you will need a private vehicle, taxi, or drop-off. The Hill Station group's other venues are the Casa Vallejo flagship, the SM Baguio bistro, and Café Adriana on Outlook Drive.
