Hill Station is widely regarded as one of Baguio's finest restaurants — a Miele Guide awardee (named among the top restaurants in Asia) set on the ground floor of Casa Vallejo, the green-and-white wooden boutique hotel built in 1909 and considered one of the oldest institutions in the city, right on Upper Session Road across from SM City Baguio. Named after Baguio's early colonial moniker, the restaurant channels old-world charm: a large open-plan room with an open kitchen, beautiful wooden floors, tall windows draped in white, and — in the evenings — a musician at the grand piano, gentle mountain air, and twinkling lights that make it one of the most romantic dining rooms in the country (a favorite for anniversaries, dates, and weddings). The menu, inspired by the travels of chef-owner Mitos Benitez-Yñiguez, blends the flavors of Asia's hill stations with Old World Europe and New World America: paellas (Valenciana and Negra), the famous crispy duck flakes over organic rice with laing, lechon kawali with laing sa gata, slow-roasted US beef and rib-eye, a roster of slow-cooked global stews and curries (Moroccan spiced baby back ribs, lamb tagine with honeyed prunes and couscous, Spanish callos, Indian lamb curry, Thai red curry, cocido, shepherd's pie), salads (the Caesar with beef carpaccio), French onion soup, sandwiches on homemade potato chips, and a curated wine list. Desserts are a destination of their own — the signature Ice Cream Palette (five house-made flavors served on a ceramic artist's palette), the bestselling Death by Chocolate, and the much-loved Mango Sans Rival. Casa Vallejo also houses Mt. Cloud Bookshop, Cinematheque Baguio, and North Haven Spa, making it a cultural stop as much as a meal. The Hill Station group runs several venues: this flagship at Casa Vallejo, the more casual Hill Station Bistro at Level 2 Sunset Terraces in SM City Baguio, the Camp John Hay bistro, and Café Adriana on Outlook Drive. It is on the pricier side for Baguio (Manila-level), the once-tiny one-page menu has grown large, and it gets busy — but the ambiance, service, and best dishes keep it among the city's most-recommended. Reservations are wise, especially in the evenings and on weekends.
