Claim this listingHatch Coffee is one of Baguio's most-loved specialty coffee spots — a third-wave café tucked away on Easter Road inside the quiet Manzanillo (Dizon) subdivision (look for the yellow gate), about 15 minutes from the city center. Opened in December 2019 by husband-and-wife Arnelli "Bondy" and Asia Aportadera, it is a residential house converted into a warm, rustic café with a spacious garden lawn, tall trees, board games, and a space for kids to play — a genuine hideaway from the city noise, beloved for its calm, homey, pet-friendly atmosphere. Bondy, a serious coffee enthusiast, built the menu around third-wave coffee: single-origin pour-overs, espresso drinks, and signature iced creations like the Dirty Horchata (their almond-cinnamon ricemilk horchata with a shot of espresso), the Shakerato topped with pinipig, and the Orange Long Black. On the food side, the stars are the grilled-cheese sandwiches — the classic with sweet habanero honey, the cult-favorite Ube Grilled Cheese, and the Longga (Baguio longganisa) and Kimchi versions — alongside eggs and toast on house sourdough, French toast, pancakes, a BLT, and a daily salad. The kitchen rotates its menu and runs daily specials (regulars ask at the counter — beloved items like the Hatch smash burger, loco moco rice meal, and the Baguio-longganisa Easter Sandwich come and go), so the lineup is not always the same. Practical notes: it is on the pricier side for the portions and adds an 8% service charge, parking is along the street, and the garden can get busy at peak — but the coffee, the grilled cheese, and the setting keep people coming back for years. There is now a second, smaller branch on Upper Gen. Luna Road in the city, plus a 24/7 Hatch Express counter at the Caltex Kisad-BGH rotunda.
