Craft 1945 unites two legacies in one charming old Baguio home: Casa Marcos — the restaurant with which pelotari (jai alai player) Marcos de Guisasola pioneered authentic Spanish food in the Philippines in 1945 — and the country's craft-beer movement, via a collaboration with Baguio Craft Brewery and the Philippines' best breweries. Opened in 2018 in a two-story 1950s-era house at 9 Outlook Drive South, lined with pine trees, chilly breezes, and foggy-street sunsets, it serves the heritage recipes in earnest: five paellas slow-fired for sharing (marinara, Valenciana, negra, aligue, saffron), four gambas (classic, crab-fat aligue, chorizo, and con gulas with baby eels), grass-fed tips and lengua salpicao, kalderetang baka, callos, lengua Sevillana, Casa Marcos steaks, Spanish chicken simmered in their own beer, and Brazilian moqueca salmon. On tap: eleven house craft beers at a flat ₱250 — including a Golden Ale brewed with Baguio apiary honey and an Ube Lager infused with Baguio ube — free to taste in flights before you commit, buy-2-get-1 daily until 6 PM, and all beers at ₱120 every Thirsty Thursday. The in-house keg-aged sangria (red or white, ₱330 a glass) headlines the alta drinks, alongside Limonada con Leche and fruit mocktails by the carafe. The hospitality is a signature in itself: complimentary baby pan de sal, free sangria and limonada tastings, celebration desserts with sparklers, kids' coloring books, pet toys, collectible pins, live entertainment — and an explicit no-service-charge-forever, "our no is your yes" policy. Since 2023, Cafe 1945 adds Spanish craft coffee (₱99 on Wednesdays), homemade pastries, and Latin desserts. Upstairs, a Spanish bullfighting mural watches the dining room — outside, al fresco tables face the pines. Reserve ahead on busy nights, and note the approach road is steep.
